Here, plain steamed kozhukattai dumplings sit inside a warm, creamy Thai curry gravy, full of coconut milk, curry paste, and colourful vegetables.

We use Anil Kozhukattai Flour to get soft, perfectly shaped dumplings every time, and a touch of Anil Jaggery Powder in the curry to balance the spice with a light natural sweetness. Ingredients Required 

For the kozhukattai dumplings:

Anil Kozhukattai Flour  1 cup 
Water  1 cup 
Oil  1 teaspoon 
Salt  A pinch 


For the Thai curry gravy: 

Oil  2 tablespoons 
Thai red curry paste  2 tablespoons 
Coconut milk  1 cup 
Small onion  1 chopped 
Red capsicum  1 chopped 
Green peas  A handful 
Sweet corn  A handful 
Small carrot  1 chopped 
Green beans  2 to 3 chopped 
Salt  To taste 
Water  As needed to adjust the gravy 
Anil Jaggery Powder  1–2 teaspoons, or to taste  

 

Steps to Prepare 

Step 1: Make the dough 

Boil the water with a teaspoon of oil and a pinch of salt in a pan. Lower the heat and add the Anil Kozhukattai Flour slowly, stirring so no lumps form. Cover and switch off the flame. Let it rest for five minutes so the flour softens fully. 

Step 2: Knead and shape the dumplings 

Once the dough is warm enough to touch, grease your palms with a little oil and knead it smooth. Take small portions and roll them into round balls. Keep them covered with a damp cloth while you shape the rest, so they do not dry out. 

Step 3: Steam the dumplings  

Grease an idli plate or steamer plate lightly with oil. Place the dumplings on it with some space between each one. Steam for 5 to 10 minutes on medium flame. They are ready when they turn slightly glossy and firm to touch. Set them aside. 

Step 4: Prepare the vegetables  

While the dumplings steam, chop the onion, red capsicum, carrot, and green beans into small, even pieces. Keep the peas and corn ready too. Cutting everything the same size helps the curry cook evenly. 

Step 5: Cook the curry base  

Heat oil in a pan. Add the Thai red curry paste and sauté for about 1 minute on low flame until fragrant. Add the chopped onion and cook until it softens slightly. 

Step 6: Add vegetables and coconut milk 

Add the capsicum, carrot, beans, peas, and corn to the pan. Mix well so the vegetables get coated in the curry paste. Pour in the coconut milk and a little water if needed. Mix well and simmer gently on low flame for 5–7 minutes. Avoid bringing the coconut milk to a rapid boil. Let it simmer on low flame, until the vegetables turn soft but still have a slight bite. 

Step 7: Balance the flavour  

Add 1–2 teaspoons of Anil Jaggery Powder and salt to taste. Mix well and simmer for another 2 minutes. Adjust the sweetness and spice according to your preference.  

Step 8: Bring it together 

Gently place the steamed kozhukattai dumplings into the curry, spooning some gravy over the top so they soak up the flavour. Let them sit in the warm curry for a minute before serving. 
Serve hot in a bowl, with extra gravy spooned generously over the dumplings.

Mistakes to Avoid 

  • Using cold water for the dough: Always use hot water when preparing the dough. Cold water can make the dough stiff and difficult to shape. 
  •  Overcooking the dumplings: Avoid steaming for too long, as overcooking can make the dumplings rubbery.
  • Adding coconut milk on high flame: Coconut milk can split if it boils too hard. Keep the flame low once it goes in.
  • Skipping the curry paste saute: Cooking the curry paste briefly in oil first brings out its full aroma. Do not skip this step.
  • Too much jaggery: The jaggery should only round off the spice, not make the curry sweet. Add it a little at a time.
  • Dropping dumplings too early: Add the steamed dumplings only at the end, so they soak up flavour without breaking apart in the gravy.
