Jackfruit Kozhukattai Recipe – Soft & Sweet Treat

Ingredients Required

Jaggery powder  1 cup 
Water  enough to melt jaggery 
Chopped jackfruit  5 pieces 
Grated coconut  1 cup 
Ghee  1 tbsp 
Cardamom powder  1/2 tsp 


For the outer layer:

Kozhukattai flour  2 cups 
Hot water  as needed

Steps to Prepare

Step 1: Make the jaggery syrup 
Take Anil Jaggery Powder in a pan and add a small amount of water. Heat on low flame until the jaggery completely dissolves. Strain the mixture if necessary to remove impurities.
Step 2: Add the filling ingredients

Once the jaggery melts, add the chopped jackfruit, grated coconut, ghee, and cardamom powder. Mix well.
Step 3: Cook the filling

Cook the mixture over low to medium heat until the excess moisture reduces and the mixture becomes thick enough to hold its shape. Allow it to cool completely before shaping.  
4: Shape the filling

When the mixture is cool enough to touch, roll it into small balls with your hands.
Step 5: Make the outer dough

Take the kozhukattai flour in a bowl. Slowly add hot water and mix. Knead it into a soft dough. Be careful, the water is hot. 

Step 6: Stuff and shape
Take a small portion of dough. Flatten it in your palm. Place a jackfruit ball inside. Cover it fully and shape into a round kozhukattai.
Step 7: Steam it

Place the kozhukattai in an idli pot. Steam for 5 minutes.
Step 8: Cool and serve
 
Let it cool for 5 to 10 minutes. Then serve warm.

● Don't over-steam. 5 minutes is enough, more time can make it hard. 
● Don't rush the jaggery melting step. Slow melting gives better taste.
